docs: align CHANGELOG and README with 1.0.5 bugfix release (2026-06-22)

Browse Source 
Document post-release fixes (QRC paths, dialogs, Flatpak 6.10, GPU/dri,
MPRIS Raise, build id) so CHANGELOG matches metainfo.xml.
